Is a grain like seed grown in the andes. quinoa contains a balanced set of essential amino acids, making it an unusually good source of protein. it's also a great source of dietary fiber and is high in magnesium & iron. its gluten free and very east to digest. there are a few varieties of quinoa the one pictured here is red quinoa.

kamut is an ancient and organic grain which is two times larger than modern day wheat and is known for it's rich and nutty flavor. kamut is also easily digested and can be used in different forms to make bread, pasta and other products for people who cannot digest gluten.

kamut puffs are a form of kamut grain processed like puffed wheat for consumption as cereal. it has a wheat like flavor and is very low in calories & fat but retains all the fiver, vitamins & minerals the grain provides.

almond flour is a baking flour substitute on the candida diet that is made from sweet blanched and then ground almonds. the consistency is like cornmeal but has a sweet taste to it. almond flour is becoming poplar for low-carbohydrate diets as well as yeast free diets because almonds are a non-moldy nut/seed. food baked with almond flour tend to be calorie dense.

agave is an alternative sweeter that is farmed from the nectar of agave plants (specific cacti). it's know for it's very low glycemic index and being 1.5 to 1.6 times sweeter than sugar. it's a great substitute for sugar or honey. there are several types of agave the amber variety has a taste similar to maple syrup.

Candidiasis: What is it?

A yeast-like fungal organism found in small amounts in the normal human intestinal tract. Normally kept in check by the body's own helpful bacteria, Candida albicans can increase in numbers when this balance is disturbed to cause candidiasis of the intestinal tract, or yeast infections of other parts of the body. There are 2 different levels of a Candida infestation:

The first, Mucocutaneous Candidiasis and milder level causes infections of the mucous membranes ( ie: Infections of the mouth and tongue, vagina, esophagus, and gastrointestinal tract). This level of infection is more common and thought to affect the "surface" or outer parts of the body more, ie; not as deeply entrenched.

The second, Disseminated Candidiasis (also called systemic candidiasis) is a much stronger level of infestation and involves Candida in the bloodstream and infecting the organs of the body. This second type can be dangerous and even life-threatening. The longer Candida has infested a body the better chance it has gone through to the deeper levels.

What are the symptoms?

  • Vaginal Yeast Infection
  • Constant fatigue
  • Brain "fog" -hard to focus or even think straight.
  • Oral Thrush (a white film on tongue or in the mouth)
  • Bad breath, foul taste in mouth
  • Abdominal pain (intestinal Candida)
  • Bloating and indigestion
  • Diarrhea and/or colitis (chronic constipation)
  • Increasing allergies to foods (gluten or celiac problems can be a direct result of Candida overgrowth)
  • Constant craving for something sweet!
  • Joint pain with arthritis-like symptoms
  • Chronic sinus drainage
  • Weight gain (or loss) and the inability to change it.
  • Fungus on the finger or toe-nails
  • Urinary infections (again, not helped by antibiotics)
  • Itching, red eyes
  • Candida Skin rashes on the body (eczema, atopic dermatitis)
  • Candida Rash inside the ears or around the groin area
  • Anal, penile or vaginal itching
  • Diminished sex drive
  • Hair loss
  • Vision problems
  • Depression from feeling so low and bogged down all the time
